Dragon fruit is most recognizable for its bright, often pink or red, leathery skin covered with prominent, scale-like bracts (hence the “dragon” name). Some varieties have yellow skin. The flesh inside can be white, red, or less commonly, purple, and is dotted with numerous tiny, edible black seeds, similar to kiwi seeds.
